Self Care Sunday: Meal Prep

My Sundays normally consist of chores - church, grocery shopping, cleaning, laundry and meal prep. I used to hate meal prepping - it’s time consuming and makes a huge mess. But slowly I realized it’s key to staying healthy throughout the week + sticking to a clean eating plan.

I started to experiment with meal prepping and finally found a pattern that works for me. It’s minimal clean up and quick, which I love. Essentially, I only meal prep my lunches, as I make quick breakfasts and Jake and I like to cook dinner together.

For lunch, I make rice and vegetables. Sounds simple, maybe boring, but it’s healthy, quick, filling and one of my favorite meals. My favorite is cauliflower, broccoli and brown jasmine rice. The meal prep is also super simple.

I put the vegetables on a tray, sprinkle a little olive oil, salt and pepper. Then I prep the rice (2 cups rice, 4 cups water) and bring to a boil. Once the rice is boiling, I turn it down to a simmer with a lid on it, and put the vegetables in on 425 degrees. Both vegetables and rice take 25 minutes. That’s it - you’re done. Sometimes I add teriyaki sauce, extra olive oil or other seasonings.
